Stuffed Bell Pepper Recipe

Serves 4  •  Time: 35 minutes
How to make stuffed paprikas bell peppers


  • 4 red bell peppers (you can use different colored peppers)
  • 1/2 cup quinoa (uncooked)
  • 1/2 cup olives, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons mixed herbs, dried
  • 1/2 grated mozzarella cheese (or any cheese you'd like)


            1. Heat oven to 200°C.
            2. Cut the peppers in half, remove the seeds and "center".
            3. Pop the peppers on a plate and microwave on medium for 5 minutes, until almost soft. Place on a baking tray, cut-side up.
            4. Meanwhile, cook the quinoa as directed on the packaging (in water). 
            5. Mix the quinoa with the olives, cherry tomatoes and herbs.
            6. Scoop the quinoa stuffing into the pepper halves and  sprinkle with the desired cheese. 
            7. Put it in the oven to bake for 10 mins. The cheese should melt and start to brown.
            8. Serve and enjoy immediately.

            Marna's handy tips

            • Mince, tuna or chicken strips can be used as stuffing to replace the quinoa. 
            • This can be paired with grilled chicken breasts or enjoyed on its own as a light meal.
