Ingredients
Salad:
- 10 fresh asparagus spears
- 2 cups strawberries
- 2 handfuls spinach
- 1 cup cucumber, diced
- 2 tablespoons sesame seeds (alternatively you can use almonds)
Salad Dressing:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Juice from 1/2 lemon
- 2 teaspoons dried dill
- 2 teaspoons paprika
- Black pepper (for serving)
Method
- Quickly cook the asparagus: Get water boiling in a large pot; add the asparagus to the pot. Let it boil for about 5 minutes. Then remove the asparagus from the pot.
- Dice the strawberries; shred some of the spinach leaves.
- Cut the asparagus in half.
- Mix the salad ingredients.
- Blend all the salad dressing ingredients together (or whisk it together)
- Drizzle salad dressing over salad.
- Sprinkle the sesame seeds over.
- Optional: Add freshly ground black pepper upon serving.
Marna's handy tips
- A nice option: Add some crumbled feta or goat's cheese
- For a sweet-treat: Add a 3 - 4 tablespoons of honey to the dressing
