Fruity & Fresh Asparagus Salad

Serves 4  •  Time: 10 minutes

Ingredients

Salad:

  • 10 fresh asparagus spears
  • 2 cups strawberries
  • 2 handfuls spinach
  • 1 cup cucumber, diced
  • 2 tablespoons sesame seeds (alternatively you can use almonds)

Salad Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Juice from 1/2 lemon
  • 2 teaspoons dried dill
  • 2 teaspoons paprika
  • Black pepper (for serving)

          Method

          1. Quickly cook the asparagus: Get water boiling in a large pot; add the asparagus to the pot. Let it boil for about 5 minutes. Then remove the asparagus from the pot.
          2. Dice the strawberries; shred some of the spinach leaves.
          3. Cut the asparagus in half.
          4. Mix the salad ingredients.
          5. Blend all the salad dressing ingredients together (or whisk it together)
          6. Drizzle salad dressing over salad.
          7. Sprinkle the sesame seeds over.
          8. Optional: Add freshly ground black pepper upon serving.

          Marna's handy tips

          • A nice option: Add some crumbled feta or goat's cheese
          • For a sweet-treat: Add a 3 - 4 tablespoons of honey to the dressing
