Makes 12 mini quiches • Time: 45 minutes
Ingredients
- 5 - 6 eggs
- 1/2 cup milk
- 2 teaspoons baking powder
- 1 cup grated cheese
- 1 slice bread, crumbled
- 1/2 cup rosa tomatoes (halved)
- 1/2 cup mushrooms, sliced
- 1 red paprika pepper, diced
- 1 red onion, diced
- Salt, pepper and mixed herbs
Method
- Preheat oven to 180℃.
- Beat eggs, milk and baking powder together.
- Then mix in cheese. Add the bread crumbs, tomatoes; mushrooms; red pepper and onions to the egg-mixture.
- Mix it all together well.
- Spice with some salt, mixed herbs and black pepper.
- Scoop the mixture into a muffin pan: Fill holes almost to the top. You may wish to add some extra cheese on top.
- Bake in the oven for 25 minutes until set and golden.
- Serve 2 muffins with fresh ciabatta bread.

- Serve it hot OR cold (Keep extras frozen for a quick & easy lunch)
- Play around with the "filling" - You can include bacon as well!
