Garlic & Onion Potato Wedges Recipe
Serves 6 • Time: 50 minutes
Ingredients
- 6 medium-sized potatoes
- 2 tablespoons olive oil
- 2 onions
- 1 head/bulb of garlic (or around 5 cloves)
- 1/2 cup butter/margarine
- Pinch of Salt and black pepper (to taste)
Method
- Preheat the oven to 180°C.
- Slice the potatoes in wedges (I keep the skin on for extra fiber!). Drizzle them with olive oil in an oven-pan.
- Put into the oven for 25 - 30 minutes (until the wedges are softened).
- While the potatoes bake, finely dice the garlic and onion. Mix it together.
- Melt the butter/margarine in the microwave.
- Mix the butter/margarine with the garlic and onion mixture.
- When the potatoes are soft: Pour the butter-garlic "sauce" over potatoes.
- Bake in the oven for 15 minutes. You can "grill" it for 5 minutes until the potatoes are crispy.
- Season with salt & pepper. Serve with your choice of protein.

- You can add mushrooms, tomato slices and some grated cheese for a full meal!
